From Butcher’s Block to Chef’s Table
My story begins in my family’s butcher shop, where I learned my first lessons about food — respect for ingredients, precision in technique, and pride in craftsmanship. My father, a skilled butcher, taught me the artistry behind every cut and the discipline that comes with mastering a trade. Those early days shaping meat by hand and serving our community formed the foundation of who I am in the kitchen today.
When our family shop closed its doors, it marked both an ending and a new beginning. Inspired by that turning point, I created a brand called Layoff Design — a name that honors the closing of one chapter and the opening of many others. What started as a creative outlet soon evolved into a multifaceted venture that explored design, photography, videography, and music — all expressions of my appreciation for craft and detail.
During that time, I joined a luxury hotel brand, serving as their head butcher. The environment refined my skills and deepened my understanding of culinary presentation, flavor, and consistency. When the hotel shifted its focus from hand-cut steak artistry to crafting in-house brewed beer for its flagship hotel restaurant, I transitioned to its banquet kitchen. There, annual sales revenue reached a staggering 40 million dollars. That’s where my true culinary journey truly began. There, I worked alongside remarkable chefs who became mentors, challenging me to push boundaries, explore world cuisines, and embrace every opportunity to learn.
Every dish I create today carries those influences — the precision of a butcher, the creativity of a designer, and the curiosity of a lifelong learner. My culinary philosophy is rooted in honoring tradition while celebrating innovation. Through private chef experiences, meal prep, cooking lessons, and food photography, I strive to share not just food, but the story behind it — one shaped by family, resilience, passion, and a deep respect for the craft.
